This photo shows the mise en place for making meringues. The class, second year, was going to practice making three different meringues, French, Swiss and Italian meringue. The teacher started the lesson in a regular schoolroom, used a Power point to go though the recipes and described how to make the meringues. The pupils got all three recipes and could easily follow the
introduction. The lesson continued in the bakery after that.

DeleteOf course they did used machines but not for all three meringues. The French meringue was whipped by hand.
ReplyDeleteLovely photo thanks Sanna. You have put a great effort into the blog - well done! I make an Australian version of meringues called Pavlova but have never had much luck with the Italian ones - they seem harder.
ReplyDeleteOh, I love the Pavlova, especially with whipped cream and a lot of strawberries and wild strawberries. Yummy! How do you like your Pavlova?
