Truffles and pralines where made by a third year class. They had to practice to temper the chocolate before they went on to make chocolates. One thing I noticed was that the students where a little insecure about mixing flavors and coming up with flavor combinations. I think that´s one of the fun parts to do, come up with tasty combinations and explore! We have to rub our passion for flavors
on to the students!

I am not sure what Xante is? A liqueur? Your English is so excellent Sanna but can I be forgiven for pointing out that 'were' is the past of 'are' - so "the students were unsure"...Where is a location or place - where are the piping bags kept? for examples.
